I’ve been craving spaghetti carbonara since I had it at Arancino’s at the Kahala. I know that I could of easily just placed an order to go, double parked and ran in to get an order but that’s $26.00 (not including tip) and my sanity for having to do all the above. I decided to just make it myself since it seemed like such a no brainer recipe. I loosely based this recipe from one that I found in my Bon Appetite magazine and threw in the parmesan chips for decoration. When I say loosely, I mean – I added spinach, used standard thick cut bacon, lots of garlic, way more parmesan that it called for and less pasta water. I personally knew what I wanted the end result to be so I was really happy with how it turned out. This was actually the 2nd meal this week that I cooked at home and I felt very accomplished. It’s been a long time since I’ve been back in the kitchen and funny enough, it coincides with our kitchen sink being down and me having to run to the restroom to wash my hands after each prep. After all was said and done, I’m glad I decided to stop ordering out so much because realistically, this whole meal cost under $13.00 if you really break it down. It had the simplest of ingredients, most of which you should have at home (maybe not the parm but who knows what’s going on in your fridge!) . Plus, it’s fun experimenting on new meals.
